Pepper potato is a simple and quick recipe prepared with boiled potatoes and cooked in a ground spicy pepper masala paste.I love the combination of hot peppercorns and potatoes, as they blend very well. Pepper potato is served as one of the vegetable in most the south Indian meals served for lunch in most of the South Indian restaurants. This is a better side dish for roti, chapathi and any variety rice. Since this is a dry preparation wrap this in chappatis like making rolls, which would make a nice lunch box treat.
Ingredients :
Aloo / potatoes – 3, medium size
Onions – 1, chopped fine
Coriander leaves – 5 tbsp finely chopped
Turmeric powder – ¼ tsp
Freshly ground black pepper corn – 1 tsp
Salt – to taste
Oil – 2 tbsp
For tempering:
Mustard seeds – ¼ tsp
Cumin seeds – ¼ tsp
Curry leaves – 5 to 6
Preparation :
Cook potatos in a pressure cooker adding salt to it. Keep aside and let it cool. Peel the skin and cut the potato into small pieces.
Heat oil in a pan, add mustard seed when they stop spluttering add cumin seeds, curry leaves and chopped onion, saute until turns to soft.
Now add the potatoes along with salt,turmeric powder, potato cubed, pepper powder and mix well. Cook in medium flame for about 5 mins.
Remove from the heat and serve garnished with chopped coriander leaves.
Potato Pepper Fry is ready to be served.......
