Mango Ice Cream

Summer  is the time when we get fresh mango in India. As we get good varieties of mango in this season. I decided to make the summer special refreshing homemade mango ice cream. Mango ice cream is an all time favourite hit. I just cubed the mangoes and blended to make this silky, smooth and delicious ice cream.


Ingredients :

Low Fat Cream - 1 tin 
Alphonso Mango - 2, big
Condense milk - 1 tin
Milk powder - 2 tbsp



Method :

Peel the mango and cube it. Put in a blender and puree it.




In a bowl add take low fat cream and beat with electric beater.



Then add condense milk and milk into it and again whisk it.

Add mango puree into this mixture and beat well.



Pour this mixture in kulfi moulds and plastic containers. 



Close the moulds and put this in the freezer atleast 8-10 hours or overnight.



Enjoy creamy and fresh homemade mango ice cream.

Aam Panna (Raw Mango Refreshing Cooler)

Aam panna is a very healthy tangy summer cooler made with raw mango pulp and spices like roasted cumin seeds and rock salt which gives you great aroma to it. Pulp of raw mango usually extracted after the whole mango which gives wonderful smoky flavor to the drink. It is a very easy prepared perfect drink to beat the heat in summer.



Ingredients :

Mango - 3, medium
Sugar as per taste
Roasted cumin powder - 1/2 tsp
Rock salt - 1 tsp



Method :

Roasted the whole green mango and cool it completely. Now peel off the skin and squeeze out the pulp from the seeds in a bowl.




Add mango pulp, 1/2 cup chilled water, sugar, rock salt, roasted cumin powder in a blender and blend it. 

Take it in a glass and add ice cube or crushed ice & Serve chilled.

Microwave Raw Mango Chunda

Raw Mango Chunda is a hot sweet and sour tasting mango pickel. Inspired from Tarla Dalal's recipe I am sharing this quick mango chunda recipe. The instant chunda is very easy to make with just few ingredients that you would already have in your kitchen. Mix raw mango with sugar, salt, turmeric, chilli and roasted cumin powder and that's it we have a chunda/pickle ready. This pickle is a very popular recipe and can also be used with pancake, parathas, pulao and sandwich or a dip with chips.  



Ingredients :

Raw mango - 1 cup (Peel the skin and grate the pulp)
Sugar - 1 cup (or as required)
Turmeric powder - 1 tsp
Red chilli powder - 1 tbsp (to taste)
Roasted cumin seeds powder - 1 tsp
salt to taste

Method :

In a microwave bowl add grated mango pulp.

Then add sugar, turmeric powder, salt, mix well, keep aside for 5 mins. Microwave this mixture on High Power 3 minutes. Open and stir well. 


Check the sugar is well dissolves or not. Then mix the chilli powder and roasted cumin seeds powder, mix well. Put this mixture in microwave for 2 mins. 

Once cooled, mixture will be little sticky, then add red chilli powder, roasted cumin seeds powder give it a quick mix. Rest it for 5 mins.

Store in a sterilised glass jar. Store upto one year in refrigerator. 

Enjoy with roti, paratha and any indian bread..

Mango Lassi

       In fact Mango lassi is one of the most popular beverages in Northern India. It is also a favorite at Indian restaurants.
          Mango Lassi is a delicious combination of mangoes and yogurt that is cool...The mango lassi drink is a cross between a smoothie and a milk shake and is smooth, creamy, and absolutely heavenly! This drink is such a refreshing drink to have on a hot summer day.



Ingredients :

Fresh mango pulp ~ 2 cup
Yogurt ~ 1 cup
Milk ~ 1/2 cup
Honey or sugar ~ 1 or 2 tbsp
Crushed Ice cubed ~3 cups, use as needed
Mint leaves and chopped cashew for garnishing



Method :

Wash and peel the mango and cut into pieces.(If you don't have fresh mangoes, substitude it with canned mango pulp)




Blend the mangoes, yogurt, milk and 2 tablespoons of sugar.  Adjust sugar according to taste.  Sugar amount will depend on the sweetness or sourness of the mango and yogurt.

Add crushed ice cubed and blend until it becomes smooth in consistency.

Pour into glasses and garnish with chopped cashew and mint leaf.
