Vegetable Hakka Noodles

Vegetable noodles is a very popular Indo Chinese dish. Hakka noodles also now a days become usual dish at our home.  I have added lot of vegetables and corn to make it more healthy. You can even use whole wheat noodles to make it even more healthier.





Prep time - under 15 mins
Cook time - under 10 mins
Serves -1


Ingredients:

Chinese noodles - 1 packet (100 grams) 
Finely chopped garlic - 2 tbsp
Onion - 1. chopped sliced 
Cabbage - 1/2 cup thinly sliced
Carrot - 1 medium size, thinly sliced
Beans - 1/4 cup, sliced
Capsicum - 1 medium size, sliced 
Frozen sweet corn - 1/2 cup
Frozen/Fresh green peas - 1/2 cup
Soya sauce - 2 tsp
Tomato sauce - 2 tbsp
Chilli sauce - 1/2 tsp
Salt and pepper powder to taste
Spring onion greens -1/4 cup finely chopped for garnishing
Oil - 21/2 tsp


Method :

Cook noodles as per the instructions given in the pack or boil 3-4 cups of water and cook noodles for 3-4 minutes. Make sure its not over cooked. Drain water and wash it to remove the excess starch and add 1 tsp oil and mix well to avoid sticking.

Heat oil in a pan, add finely chopped garlic and saute for 2 seconds. Then add onions and saute for a few more seconds on high flame followed by carrot, cabbage and capsicum. Saute the vegetables on medium flame.You should cover cook the vegetables.

Then add the sauces, salt and pepper. Give a quick stir. 

Finally add the drained noodles and mix well. Add the chopped spring onion, toss everything together, so that the noodles get coated with the sauces well. Switch off the flame.

Serve hot with any Manchurian or as such with sauce.

Veggie Kathi Roll

Vegetable kathi roll is chapathi roll filled with spicy vegetable filling and green chutney. Kathi rolls are great for lunch boxes or picnics. The filling can be altered according to your choice of paneer and chicken also. It came out really well and my family enjoyed it very much. I hope everyone else like it too. Its healthy meal for kids and I hope you enjoy it.




Ingredients :

For paratha :

Whole wheat flour - 1 1/4 cups
Maida - 1/4 cup
Salt to taste
Oil - 1 tsp
Milk - 1/2 cup
Water to knead the dough

For filling:

Mixed vegetables(I used carrot,potato, cauliflower, capsicum, peas and beans)
Turmeric pwd - a pinch
Ginger-green chili paste - 1 tsp
Kitchen King Masala - 1 tsp
Chaat masala powder - 1 tsp
Onion - 1, finely slice
Lemon juice - 1 tbsp

Method :

Mix salt, wheat flour and maida. Add milk slowly add water to form a soft yet slightly firm dough. Cover and let it rest till you get the stuffing ready..

Heat oil, add onions and saute until golden brown.Add ginger chilli paste and saute for a min then add all the veggies, saute for 3mins or until cooked till the
veggies are soft.

Add turmeric pwd, kitchen king masala and chaat masala pwd and combine. Turn off heat. Add the lemon juice and salt to taste and mix. Keep aside..



To make it as a wrap:

Pinch a lemon sized ball from the dough and flatten it like we do for chapathis. Dust flour if needed.

Heat a iron tawa and once its hot, place a paratha and let it cook lightly on both sides. Prepare all the rotis and place them in a casserole to keep soft.

At the time of serving, add little oil and toast the prepared parathas. Apply green chutney on one side of the chapathi then spread a tbsp of vegetable filling in the middle of the roti and sprinkle the chopped onion filling over it and roll the roti tightly to form a roll.

Vegetable Dalia

This is a very healthy and nutritious recipe for the breakfast or for lunch. Broken wheat or Dalia has high ratio of calcium, vitamins, iron and other essential nutrients which are critical to the growth and health of the body. Broken wheat is a great source of daily fiber. It becomes even healthier, when we add all the vegetables we have. It makes it more flavorful and yummy.



Ingredients:

Broken wheat ( Dalia) - 1 cup
Carrots - 1, thin slice
French beans - 4-5, finely chopped
Onion - 1, big, chopped
Tomato - 1, chopped
Ginger Paste - 1/2 tsp
Green chilli - 2,sliced
a sprig of curry leaves
Oil - 1 tbsp
Cumin seeds - 1 tsp
Pepper powder - 1/2 tsp.
Sambar powder(optional) - 1 tsp
salt to taste
Chopped fresh coriander leaves for garnishing


Method:

Soak broken wheat in water for half an hour and drain the excess water.

Heat oil in a pressure cooker and crackle cumin seeds.

Add sliced green chillies and curry leaves and fry for few seconds.

Add chopped onion and fry until it is translucent. Add all the vegetables (carrots and beans) and chopped tomato, ginger paste and saute for a minute.

Add dalia and 3 cups of water and let it come to a boil and add salt to t
aste.

Place the lid of the pressure cooker and pressure cook for 2-3
whistles.

Open the pressure cooker lid after the pressure drops down,stir in
sambar powder, pepper powder and chopped coriander and cook for 2-3
mins.

Vegetable Dalia is ready to serve hot with Papad and Spicy Mango Pickel.






Bombay Masala Toast Sandwich

Bombay Masala Toast Sandwich is a very popular in Mumbai. You will find a sandwich stall near every almost college, near railway stations, in markets etc. The flavor of green chutney is goes well with sandwich. Bombay Masala is made from boiled and mashed potatoes , which are tempered with spices and drizzled with chaat or sandwich masala. Serve hot with green chutney and tomato ketchup. 




Ingredients :

Green Sandwich Chutney :

Coriander leaves - 1 cup
Mint leaves - 1/2 cup
Green Chillies - 2
Salt
 

For the potato filling:

Mashed Potato - 2 cup
Onion – 1/2, finely chopped
Tomato – 1/2, finely chopped
Green chilly –  1, small, finely chopped
Curry leaves – 1/2 sprig (optional)
Cumin seeds - 1/2 tsp
Mustard seeds - 1/4 tsp
Coriander leaves - few chopped
Turmeric powder - 1/4 tsp
Red chili powder - 1/4 tsp (optional)


Other ingredients :

8 slices of bread – brown or white
a few thin round slices of onions, tomatoes, capsicum, cucumber
Amul Butter or any other brand of Butter
Sandwich Masala or Chaat Masala


Method :

To make the green chutney :

Grind the ingredients for the green chutney with little water to a smooth paste. If this chutney remains, then you can use it as a dip for pakoras, samosas, or even serve it as a side dish with pulaos or biriyani.

To make the potato filling :

In a pan, heat some oil, add mustard seeds and cumin seeds,let them splutter. Then add onions. Fry the onions till transparent.

Now add chopped tomatoes. Fry the tomatoes till they become soft and are cooked.

Add the chopped green chilli. Add the all the spice powders mentioned above. Mix them well.

Now add the mashed potatoes. Add salt. Mix the stuffing really well. Keep on stirring on a low flame so that the mixture does not stick to the pan, cook for 5 minutes.

Let the mixture cool before you start using it for the sandwich.

To make the sandwiches :

Firstly, trim the edges of the bread. Apply butter evenly on the bread. Now apply the green chutney on the bread.


Apply green chutney on one bread. On the another bread layered mashed potatoes mixture. Keep  one or two onion, tomato and capsicum rings on this mixture. Sprinkle some sandwich masala or chat masala.  

Now cover this potato laden bread with another slice of bread, to which both butter and chutney has been applied. In a sandwich toaster or grill, toast or grill the sandwich till browned from both sides.

Remove and apply some butter on top of the sandwich. The butter melts. Ah….. melted butter on hot sandwich. Its crisp from outside and spicy and soft from inside.


Serve the sandwich cut into two with the green chutney and tomato ketchup.

Dalia (Broken Wheat) Moong Khichdi

If you love khichdi, then Dalia Moong Khichdi is the best solution. Dalia is full of taste, flavour and health. The khichdi is very nutricious as it is full of fiber and wellness of broken wheat as well as moong dal. It is a very light meal and is very easy to prepare.


Ingredients :

Dalia - 1 cup
Moong Dal - 1/2 cup
Mixed vegetables (carrots,french beans,cauliflower) - 1 cup, chopped
Green peas - 1/2 cup
Green Chilli - 1, slited

Ginger-garlic paste - 1 tbsp
cumin seeds - 1/2 tsp
Turmeric powder - 1/2 tsp
Garam masala powder - 1/4 tsp

Oil - 1 tbsp
Salt to taste
Ghee to taste


Preparation :

In a kadai, dry roast moong dal. Then wash it and keep aside.

Heat the kadai with oil. Add jeera, red whole chilli. When they crackle add mixed vegetables and green peas. Cook for 5 mins in low flame.

Then add ginger-garlic paste. Mix well and keep stirring for 3-4 minutes on medium heat.

Put dalia and moong dal and stir very well with the vegetables.

Take a pressure cooker. Put the mixture into the pressure cooker and pour 3-4 cups of water. Add turmeric powder and salt. Place the lid and put the pressure cooker on the gas oven. Wait for two whistle and after that keep the gas flame low for 5 minutes. Put off the gas and wait for sometime. Open the lid.


Put ghee and sprinkle garam masala powder over the preparation.

Serve hot with roasted papad and chutney.
