Chocolate Biscuit Pudding

Easy Chocolate  and biscuit layer pudding.
Prep Time: 30 minutes
Cook time: 5 to 8 minutes
Serves: 5 to 6  people
Ingredients:
  1. Marie biscuits,crushed- 200 gms( about 40 biscuits)
  2. Butter-100 gms( about 1/2 cup)
  3. Milk-1.5 Cups
  4. Sugar- 1 Cup
  5. Cocoa powder- 3 tbsp
  6. Cornflour-2 tbsp
  7. Vanilla extract-1 tsp
  8. Whipped cream-1 Cup( or as required)
Instructions:
  • In a mixing bowl,combine together crushed biscuits and butter.Blend with your fingertips until the mixture resembles coarse crumbs.Keep aside.
  • In a sauce pan,combine together milk,sugar,cocoa powder and cornflour.Mix well until combined.Cook this milk mixture until it turns really thick,stirring continuously.Allow it to cool completely,add vanilla and mix well.
  • Place a layer of the biscuit crumbs in a large serving dish,or small individual bowls.Add a layer of the prepared chocolate pudding ,repeat layers finishing off with biscuit crumbs.
  • Top it with whipped cream,if desired.Refrigerated for about 3 to 4 hours.Serve cold.

    Easy and delicious ,chocolate fudge frosting.
    Prep Time: 5 minutes
    Cook time:10 to 12 minutes
    Yields: 3 cups( approx)
    Ingredients:
    1. Cocoa powder- 1 cup
    2. Sugar-2 cups
    3. All purpose flour-1/2 cups
    4. Milk- 3 cups
    5. Butter,softened- 1/2 cup
    6. Vanilla extract- 1 tsp
    Instructions:


  • In a bowl,combine together cocoa,sugar and all purpose flour using a whisk.
  • Add milk and butter,mix well until combined.
  • Cook,stirring continuously on a double boiler until it is thick enough to spread.( adjust the consistency according to your requirement ,as frosting turn slightly thick when it cools down)
  • Add vanilla extract and mix well.(I also added 1 tsp instant coffee powder)
  • Allow it to cool a bit before using. 
  • NOTES
    • For best results use good quality cocoa powder.

    Ingredients:
    1. Granulated sugar- 1/2 cup
    2. Cocoa powder-1/3 cup( use good quality cocoa)
    3. Cornflour-3 tbsp
    4. Dark brown sugar- 3 tbsp
    5. Salt-1 pinch
    6. Milk- 4 cups
    7. Egg yolks ,lightly beaten- 3 large
    8. Grated chocolate- 1/4 cup
    9. Vanilla extract- 1 tsp
    10. Butter -1 tbsp
    Instructions:
  • In a large saucepan combine together,granulated sugar.cocoa powder,cornflour,dark brown sugar,salt and milk.Mix well until combined.Bring this to a boil,stirring continuously.
  • Place egg yolks in a bowl.Gradually add hot milk mixture to egg yolks,stirring continuously.Return this to the saucepan.
  • Cook over medium heat ,stirring continuously,for about 5 minutes or until the mixture turns thick.
  • Switch off the stove,add grated chocolate and vanilla extract and butter.Mix well until chocolate melts completely.(If there are lumps,just pass the pudding through a strainer and break the lumps using the back of a spoon)
  • Transfer it to a bowl ,serve warm or chilled.






  • STEAMED CHOCOLATE CAKE | EGGLESS STEAMED CHOCOLATE CAKE

    Ingredients
    1. All purpose flour- 3/4 cup
    2. Sugar- 1/2 cup
    3. Cocoa powder- 2.5 tbsp
    4. Baking soda- 1/2 tsp
    5. Salt- 1 pinch
    6. Instant coffee powder- 1/4 to 1/2 tsp( optional)
    7. Water- 1/2 cup
    8. Oil- 2 tbsp
    9. Vanilla extract- 1 tsp
    10. White vinegar- 2 tsp
    Directions
    • Lightly brush the sides and bottom of the baking tray with oil.Line it with parchment paper.
    • In a mixing bowl,whisk together all purpose flour,sugar,cocoa powder,baking soda,salt and coffee powder(if using).Keep aside.
    • In another mixing bowl,combine together water,oil,vanilla and white vinegar.
    • Add this to the prepared dry ingredients.
    • Mix gently with a spatula ( or a whisk), just until combined.Do not over mix.
    • Immediately transfer this to the prepared cake pan.Do not fill more than half of the pan.
    • Cover the top loosely with a piece of aluminum foil.
    • Place the cake pan in the steamer.Cover the steamer and steam for about 40 minutes,or until a skewer inserted into center of the cake comes out clean.
    • Remove the cake pan from the steamer.Allow it to cool completely .Then carefully run  a knife around the inside edge of the pan,and transfer to a serving dish.
    • If wished decorate with chocolate ganache.
    NOTE
    • Line the sides and the bottom of the cake tin with parchment paper ,for cleaner sides.I did not line the sides of the pan and as you can see the sides are not that pretty.
    • You can also bake the cake ,if desired,Bake at 180 deg c for 20 to 25 minutes or until a skewer inserted into the center of the cake comes out clean.
    • I used whole wheat flour for the cake( in the pic), the texture will be much better than this ,if you use all purpose flour.
    • You can double the recipe for an 8" cake.
    • Allow it to cool completely before slicing  with a serrated knife.For perfect slices ,chill the cake in the refrigerator for 30 minutes.

    NEVER FAIL PUDDING / EASY CHOCOLATE LAYER PUDDING

    Ingredients
    1. Butter( room  temperature)- 1/2 cup
    2. Marie biscuit -powdered- 1.5 cups
    3. Grated coconut- 1 cup
    4. Drinking chocolate powder-3/4 to 1 cup
    5. Condensed milk- 1 tin( 400 ml)
    Method
    • Preheat oven to 180 Deg C.
    • In a mixing bowl combine together butter and powdered biscuit.Using a spoon ,press this evenly over the bottom of a pie dish or individual ramekins/small baking dishes.
    • Spread grated coconut evenly over the biscuit layer.
    • Spread drinking chocolate powder over the coconut layer.
    • Carefully pour condensed milk over the chocolate powder layer.
    • Bake for about 10 minutes.Allow it to cool slightly (dust with cocoa powder and garnish with chopped cashew nuts if desired.)
    • Serve with cream or vanilla /caramel ice cream.

    Easy - One Bowl Brownies

    Ingredients
    1. Butter- 2/3 Cup (150 gms)
    2. Light Brown Sugar- 1 Cup
    3. Eggs- 2 Nos
    4. Vanilla extract- 1 tsp ( optional)
    5. Cocoa Powder - 1/2 Cup
    6. All purpose flour- 1/2 Cup

    Directions

    • Preheat oven to 170 Deg C.Line a baking pan (8x8) with parchment paper.
    • In a mixing bowl combine together  butter and sugar until light and fluffy.
    • Add eggs one at a time and mix until combined.Add vanilla extract and mix well.
    • Next add  cocoa powder and all purpose flour.Mix until combined.
    • Transfer the batter to the prepared pan and bake for about 25 to 30 minutes.( or until a skewer inserted into the brownie comes out with moist crumbs).Allow it to cool slightly.
    • Cut into squares and serve it as it is or with vanilla ice cream.
    Notes: 
    • Use a smaller pan for thicker brownies.
    • Use good quality cocoa powder for best results.

    EGGLESS MARBLED BANANA BREAD- VEGAN MARBLED BANANA BREAD

    Method

    1. Mashed banana-1 Cup ( about 2 overripe bananas)
    2. Light brown sugar-3/4 cup
    3. Vanilla extract-1 tsp
    4. Vegetable oil- 2 tbsp
    5. Milk-1/3 cup ( Use almond milk or soya milk for vegan bread)
    6. Whole wheat flour-1 1/4 cup ( see notes)
    7. Baking soda- 1 tsp ( see notes)
    8. Salt-1 pinch
    9. Cocoa powder-3 tbsp
    10. Boiling water- 6 tbsp,divided


    Instructions

    • Preheat oven to 180 deg C.Line a 8x4 loaf pan with parchment paper or lightly grease it.
    • In a large mixing bowl,combine together mashed banana,light brown sugar,vanilla extract,vegetable oil and milk.
    • In another mixing bowl whisk together whole wheat flour,baking soda and salt until combined.
    • Add dry ingredients to the prepared banana mixture and mix gently using a wooden spatula,just until combined.Do not over mix.
    • Transfer 1 cup of batter into a separate bowl.Combine together 3 tbsp boiling water and cocoa powder.Mix well until smooth.Add this to the one cup batter that was separated and mix gently,just until combined.
    • Add 3 tbsp boiling water to the remaining batter and mix gently ,just under combined.
    • Alternately spoon the mixtures into the loaf tin.
    • Bake for about 45 to 50 minutes or until a skewer inserted into the bread comes out clean.
    • Allow it to cool completely before slicing.
    Notes
    • You can use 1.5 cups all purpose flour also,in that case use 3/4 tsp baking soda.

    Ingredients
    1. All purpose flour- 1.5 cups
    2. Cocoa powder- 3 Tbsp
    3. Baking Soda- 1 tsp
    4. Salt- 1 Pinch
    5. Sugar- 1 Cup
    6. Oil- 1/4 Cup
    7. Water- 1 cup
    8. Vanilla essence- 1/2 tbsp
    9. White vinegar or Lemon juice- 1 tbsp
    10. Instant coffee powder- 1/4 to ½ tsp (optional)
    Directions
    • Preheat oven to 180 Deg C.Line baking pan ( 9" x 9" ) with parchment paper,or grease it with oil and lightly dust with flour.
    • Whisk together all purpose flour,cocoa powder,baking soda and salt in a large mixing bowl.Keep aside.
    • In a mixing bowl ,combine together sugar,oil,water,vanilla essence,white vinegar and instant coffee powder( if using) until sugar is completely dissolved.
    • Add this to the dry ingredients and mix until combined.
    • Pour the batter into the prepared tray and bake for about 35 to 40 minutes or until a skewer inserted into the cake comes out clean.
    • Allow it to cool completely and cut into squares.(Or  cut the cake horizontally into two using a serrated knife,spread chocolate ganache between the layers and on top of the cake.Sprinkle grated chocolate on top,if desired.)
    CHOCOLATE GANACHE

    Ingredients
    1. Chopped Dark chocolate- 1/2 cup
    2. Coconut Cream( for vegan option) or use regular cream- 1/2 cup
    Method
    • In a sauce pan bring cream to just under a boil.
    • Transfer this into a bowl,and add the chopped chocolate.Mix well until smooth.
    • Allow this to cool completely and  refrigerate  for 1 hour or until  required.
    Note :You can also use whole wheat flour and brown sugar instead of all purpose flour and white sugar for a healthier cake,as i did.
