Grilled Rohu Fish

Rohu fish is a river fish which is very famous in Bengal. We Bengali's can't complete a lunch without fish. A wonderful grilled fish with aroma of onion. garlic and Indian spices. I just marinade my fish pieces with onion-ginger-garlic paste, indian spices and tandoori masala and baked them. We enjoyed thoroughly this flavorful grilled fish with Lemon rice or serve as a snacks also.


Ingredients :

Rohu fish fillet - 4 pieces
Onion  paste - 2 tbsp
Ginger-garlic paste - 1 tbsp
Green Chilli paste - 1 tsp
Turmeric paste - 1/2 tsp
Red chilli paste - 1/2 tsp
Coriander powder - 1 tsp
Garam masala powder - 1 tsp
Tandoori powder - 1 tsp
Lemon juice - 1 tbsp
Refine oil - 1 tsp
Salt to taste


Method :

Wash and clean the fish fillet well.  Firstly marinate with lemon juice, turmeric powder and little salt. Keep aside for 10 minutes.



In a bowl, combine remaining ingredients to make a paste. Apply the masala paste over the marinated fillets and allow to marinate for 3 to 4 hours in the refrigerator.



Preheat the oven to 180 degree C. Arrange the fillets on the lightly grease aluminium foil on the baking sheet and grilled it 10-12 minutes per side or until golden brown.


Serve hot with lemon rice and Malabar fish curry..

Savory Semolina Cake

A nutritious and healthy Indian style savory snack or breakfast loaded with aroma. This savory semolina cake is simple to put together with lots of vegetable and no butter or egg. The color comes from spices and topping of sesame seeds gives crunchiness. This easy savory cake adapted from Anjum Anand's cookbook. I would recommend  having it in evening with a cup of tea or coffee.



Ingredients :

Semolina - 1 cup
Yogurt - 1 cup
Vegetable - 1 cup (Carrot, beans)
Onion - 1 big
Frozen peas - 1 handful
Ginger - 1 tsp, grated
Green chilli - 1, chopped
Red chilli powder - 1 tsp
Turmeric powder - 1 tsp
Baking soda - 1/2 tsp
Sugar - 1/4 tsp
Curry leaves - a handful
Salt to taste
White sesame seeds - 1 tsp, for sprinkling 

For Seasoning ~

Oil - 1 tbsp
Mustard seeds - 1/2 tsp
Cumin seeds - 1/2 tsp

Method :

Preheat the oven into 200ºC. 

Chop carrot, beans, green chili and onion. 

In a mixing bowl pour in semolina, yogurt and water, mix well.

Heat oil in a pan add cumin seeds and mustard seeds when it start to splutter and cumin is aromatic then add curry leaves, chopped onion, vegetable, frozen peas, spices and cook for 3-5 minutes.

Now add this mixture into batter and add baking soda, stir it well. Immediately transfer this mixture into loaf pan and Sprinkle over sesame seeds. Bake in the preheat oven for 25-30 minutes.

The cake is ready when a toothpick inserted in the middle comes out clean and the edges are crisp. Leave the cake to cool in the tin.



When cooled take it out of the tin and slice them. Serve hot.........

Honey-Glazed Lemon Grilled Chicken

This honey-glazed grilled chicken is very easy and delicious twist to classic grilled chicken. Honey and soy sauce make such a tasty combination in this recipe. The lemon juice marinade tenderizes the chicken while the honey glaze adds a sweet balance to the lemon. Enjoy this delicious grilled chicken glazed with honey and soy sauce. 



Ingredients :

Chicken drumstick - 2

For marination ~

Onion paste - 2 tbsp
Ginger -garlic paste - 2 tbsp
Chilli paste - 1 tbsp
Lemon juice - 2 tbsp
Black pepper powder -  1/4 tsp
Brown sugar - 1/2 tsp
Salt to taste
Soy sauce - 1 tbsp
Honey - 2 tbsp




Method :

Preheat the oven 180°C. Clean the chicken pieces and pat dry. 

In a bowl mix together onion paste, ginger-garlic paste, chilli paste, pepper powder, brown sugar, half of honey, half of soy sauce and salt. Using your hand, rub the money mixture all over the chicken. Cover and refrigerate atleast 1 hour.

In an another bowl add half of soy sauce and honey, mix it well.

Before grilling the chicken brush this mixture in chicken pieces. Grilled the chicken at 175ºC for 30-40 minutes or until chicken is tender. 

Turning once and brushing with honey mixture last 10 minutes that gave it more testiest and crispiness.

Serve hot with onion slices......

Spicy Biscuits/ Masala Cookies

Spicy cookies is a simple and easy to make but of course these biscuit tasted spicy, crunchy and scrumptious taste. I made the using whole wheat flour and added little maida and flavored with red chilli, black pepper powder, roasted powder, dried parsley, curry leaves, ajwain with the addition of yogurt. We love to savor it with our coffee or tea.  


Ingredients :

Whole wheat flour - 1 cup
Maida - 1/2 cup
Butter - 2 tbsp
Canola oil - 1/4 cup
Red chilli powder - 1/4 tsp
Black pepper powder - 1/4 tsp
Roasted cumin seeds powder - 1/4 tsp
Ajwain - 1/4 tsp
Dry parsley powder - 1/4 tsp
Green chilli - 2, finely chopped
Curry leaves - 1 tbsp, finely chopped
Rava/Semolina - 1 tsp
Baking powder -  1 tsp
Yogurt - 2 tbsp
Sugar -  1 tsp
Salt - 3/4 tsp



Method :

Pre- heat the oven in convection mode at 170 degree Celsius.

In a bowl mix wheat flour, maida, semoline, red chilli, black pepper, roasted cumin powder, ajwain, green chilli, curry leaves, dry parsley powder, baking powder, salt and sugar. Now add butter and mix well. It will form a crumble dough. Add yogurt and kneed well to form of stiff dough.


Take a small portion of dought and roll it just like a roti about 2 mm thickness.


Using cookie cutters, cut the rolled dough into desired shape.



Grease the cookies tray with butter and sprinkle some little flour. Place them on the prepared baking tray.



Place the tray in the oven and bake for about 20 mins or until the edges begin to start during golden brown.




Remove from the oven allow it to cool completely. 



Enjoy and you can store them in airtight container.

Healthy Baked Pakora

Pakoras are fried snacks made from Besan (gram flour) batter. You can use a variety of vegetables such as potato, onions, cauliflower or some of the leafy greens, dip them in batter and deep fry them until lightly golden and crisp. I bake the pakora in muffin pans instead of frying it. They came out fluffy and light, a complete success.






Ingredients :

Gram flour - 1 cup
Rice Flour - 1/4 cup
Vegetable ur choice (I used potato, onion)
Green chilli - 1 tbsp
Red chilli powder - 1 tsp
Turmeric powder - 1 tsp
Amchur powder - 1 tsp
Lime juice - 1 tsp
Chopped coriander leaves
Salt to taste
Vegetable oil 
Water as require


Method :

Preheat oven to 175 degree. lightly coat it with oil spray.

In a bowl, combine all ingredients except water and mix with a spoon. While stirring,  Add water little by little and make a stiff dough. I added about half cup water.You should be able to scoop out with spoon on 

baking sheet.

Drop about 1 tablespoon of batter onto the prepared baking mould.

Bake the Pakoras for about 20 minutes or until lightly golden in color. Serve hot with Ketchup and Masala Chai.






Coconut Cookies


Coconut cookies are sweet, light and crispy, with a rich coconut flavor  If you love coconut, if you love crispy cookies, you will love these. These cookies are ready so quickly, easily.





Ingredients :

Maida - 1 cup
Coconut - 1 cup
Butter - 150 gm
Egg - 1
Sugar - 150 gm
Vanilla essence - 1 tsp
Cardamom powder - 1 tsp
Baking powder  - 1 tsp
Salt a pinch

Method : 

Preheat the oven 180C for 15 mins.

In a large bowl, cream butter and sugar until creamy. Add egg and vanilla essence. Beat together.

In a medium bowl, stir together flour, baking soda, salt, coconut. Stir dry ingredients into wet ingredients until just combined and there is no flour showing in batter.

Place tablespoons full of dough on cooking sheet.

Bake at 180 for 10 - 12 minutes, until lightly golden brown.

Remove from oven and let cool on cookie sheet for 5 minutes before moving to wire rack to cool completely.




Chocolate Frosting Orange Muffin

Celebrating our 4th wedding anniversary with chocolate frosting orange muffin. I had just seen them while flipping through a cookbook and thought they sounded great. These muffins are just barely sweet with a bright, fresh orange flavor, a gorgeous chocolate frosting. I think yogurt is a magical ingredient in baking.  I makes things fluffy and fabulous spongy. We love the combination of range in this sweet breakfast muffin with a chocolate topping.  



Ingredients :

For the cupcake:

Wheat Flour - 1/2 Cup
Maida - 1/2 cup
Egg - 1
Orange - 1 large
Yogurt - 1/2 cup
Baking powder - 1 tsp
Sugar - 1/2 cup
Butter - 60 gm (room temperature)

For the frosting/icing :

Pillsburry chocolate cream.


Method :

Preheat oven to 350 deg F (180 deg C).

Grease muffin tins or 6 medium cups.

In a bowl mix two flour and baking powder together and keep it aside.

In a different bowl beat the butter. orange juice with sugar till fluffy, then add eggs, beat for 1 minute.
Now add yogurt beat for another 1 minute. Then fold in the flour mixture and mix it nicely.

Then pour the mixture into a grease muffin tins and bake at 180 degrees, until a wooden pick inserted in center comes out clean, about 20 minutes for medium size muffins.

Take out and cool. When the cakes are completely cool, frost, decorate with chocolate syrup, and take a bite!

A Very Merry Christmas With Chocolate Oats Cookies

Classic Chocolate Oats Cookies are always a weekend favourite which is crumble quickly and have a soft and melt in the mouth feel with a heavenly chocolate flavor and the oats compliments the chocolate with a bit of crumbly crunch. 



Ingredients:

Oats (I use Quakers) - 1 1/4 cup
All-purpose flour - 1/2 cup
Egg - 1
Powdered sugar - 1 cup
Unsweetened cocoa pwd - 1 1/2 tbsps (adjust according to your taste)
Baking powder - 3/4 tsp
Baking soda - a pinch 
Vanilla essence - 1 tsp 
Refine Oil - 1/2 cup

Method :

Sieve maida, baking powder, baking soda and cocoa powder, keep it aside.

Preheat the oven and keep it ready. Grease the baking tray and dust flour on it.

Blend the sugar, oil and egg beat until smooth.

Now add the flour and the oats to the sugar-oil creamed mixture and fold until well incorporated.

Add vanilla essence and mix well to form a very soft dough. If the dough doesn’t become stiff enough to roll out into balls, add a few tbsp of milk and chill for a few minutes. Be careful when shaping out the dough into small balls, as it does take effort to hold it together to form small balls and slightly flatten them.

Place on a greased tray and bake at 180 C for about 10-12 mts or till done.

Remove from oven and let it cool. Once cooled, they will be perfect.Transfer it to an air tight container.
