Aloo Baingan Sabzi / Potato Brinjal Cuury

Aloo baingan ki sabzi is a very easy and simple North Indian dish. Aloo-baingan is a fantastic combo which is melt in mouth and the main flavors of this dish comes from the tempering ingredients..


Ingredients :

Brinjal - 1/2 kg 
Potato - 3
Onion - 1, chopped
Tomato - 1, chopped
Ginger paste - 1 tsp 
Turmeric powder - 1/2 tsp
Red chilli powder - 1/2 tsp
Coriander powder - 1/2 tsp
Garam masala powder - 1/2 tsp
Salt to taste
Sugar - 1/4 tsp 
Crushed Fried Bori for garnishing

Tempering :

Mustard oil - 3 tbsp
Fennel seeds - 1/2 tsp
Mustard seeds - 1/2 tsp
Cumin seeds - 1/2 tsp 



Method :

Wash brinjal and chop to make small cubes.

Peel,chop potato in cubes and boil in in pressure cook. Keep aside.

Heat oil in a pan, when it become warm then add all tempering ingredients.

When seeds are start crackling then add chopped onion, brinjal, salt and turmeric powder. Stir the few minutes then cover and cook for 2 minutes.

Now open the lid add chopped tomato, ginger paste, mix well. Cover and cook for few seconds.

add all the spices i.e. turmeric, red chilli, coriander, coriander powder and salt, mix gently.

Cover and cook on low flame till cook completely.

Garnish with crushed fried bori and serve with chapathi.
