Potato With Mint And Coriander Sauce (Pudina Dhaniya Aloo)

Potato is eaten cooked as a vegetable, boiled, baked (often jacketed), mashed or as chips (French fries). Potato is a frequent ingredient in soups, stews and pies.Crisps (chips) are eaten as snacks. Potato (Aloo) is perhaps the most popular vegetable in the world and is used in a number of dishes such as appetizers, curry,salads, dessert also.


Ingredients:

Potatoes - 250 gms
Onion - 2, small, sliced
Mint leaves - 1/2 cup
Coriander leaves - 1/2 cup
Green chillies - 3
Ginger-garlic paste - 11/2 tbsp
Tomato - 1, medium
Turmeric powder - 1 tsp.
Red chilli powder - 1/2 tsp
Coriander powder - 1 tsp
Sugar - 1/2 tsp
Salt - to taste
Cumin seeds - 1/2 teaspoon
Bay leaves - 1 or 2
Oil - 4 teaspoon

Method:

Grind Mint leaves, Coriander leaves, Green chilies,salt and little water. Make a green paste out of it.

Boil potatoes and peel its skin carefully.


Heat oil in a pan, fry boiled potaoes until golden brown.

In the same oil, add bay leaves and cumin seeds, when seeds are splutter then add finely chopped onion, fry until golden brown.

Now add ginger-garlic paste, chopped tomato, cook for 2 mins.


Then add all spice powder, fried potato, salt and sugar, mix well.

Now finally add green paste, cook become golden yellow. Remove them from gas.

Serve it hot with any indian bread like roti, paratha.
