Phirni is a popular North Indian creamy rice based dessert. Its taste best when chilled. The saffron is soaked in milk, sugar, cashew nuts powder, rice flour. I made it kesari phirni, as the saffron makes this dish extra flavourful.
Ingredients :
Whole milk - 1 litre
Rice flour - 100 gms
Cashew nuts powder - 100 gms
Sugar - 200 gms
salt a pinch
Saffron (Kesar) - 1/2 tsp (dissolves in milk)
Rose water - 4-5 drops
Chopped nuts (almond, raisin) for garnishing
Method :
In a heavy pan, heat milk, bring to slow boil.
Dissolve the rice flour and cashew powder little bit of cold milk, slowly add to hot milk. Continue to cook over low heat. Stirring constantly until the mixture become thick just like a custard.
Now add sugar and a pinch of salt and cook for 2-3 minutes till the sugar is completely dessolves. Add rose water and saffron milk, mix well.
Pour in a bowl and garnish with chopped nuts.
