In break, I was not able to devote much time for my blog. The reason being that I was extremely busy with puja festival . It feels good to be back after a mini break from blogging.
Preheat the microwave oven at 180°C at convection mode.
Eggless Almond and Chocolate filled Butter Cookies are easy and quick baking . Baked loads of eggless choco almond cookies with a delicious surprise packed in them. One bite into the cookie and you will realize that its the most palate pleasing sweet treat. This is great with tea or coffee.
Ingredients:
Maida - 1-½ cups
Unsalted butter - ¾ cup
Powdered sugar - ¾ cup
Baking soda - ¼ tsp
Vanilla extract 1 tsp
Cocoa powder - 1 tbsp
Milk - 2-3 tbsp
Salt - ½ tsp
Almond - 2/3 cup, chopped
Unsalted butter - ¾ cup
Powdered sugar - ¾ cup

Milk - 2-3 tbsp
Salt - ½ tsp
Almond - 2/3 cup, chopped
Method :
Sieve flour, cocoa powder, salt and baking powder in a bowl. Keep aside.
Take a bowl and beat butter and sugar till light and creamy. Mix in vanilla essence in mixure.
Gradually mix in the flour mixture. Add milk, and chopped almonds, mix well.
Put a spoonful of the mixtute on the greased non-stick tawa a little apart.
Bake at 180°C for 20-25 mins on lower rack till edges start getting brown.
Cool it well to let it get crisp and serve with hot tea / coffee.
