Idichakka Thoran / Tender jackfruit scrambled

              One of the finest seasonal recipes followed during these months in kerala includes Idichakka Thoran. Its a poriyal/upperi made with tender jackfruit and coconut. i never use this as a side dish for my lunch or dinner, i love having them in a katori like a snack. one of the yummy, traditional kerala dishes i love to share.



           
                In case of cleaning the tender jackfruit (Process to clean tender jackfruit - illustrated by pictures), it might be a bit difficult one for starter's but once the dish is done and you taste it....u will feel the worth of your work :)

Ingredients:

Tender jackfruit (diced)               -    3 cups
Coconut (Grated)                       -   1 cup
Coconut oil / Cooking oil(any)     -   4 Tablespoon
Mustard seeds                          -  1 Teaspoon
Onion (Sliced)                           -  4 Tablespoon
Curry leaves                              -  8 to 10 leaves
Dry Red chilli                            -  3 no's
Salt                                          -  To taste
Water                                       -   As required

Method:

  • Add water to the level of diced tender jackfruit in a pressure cooker.
  • Cook them with required salt until they are soft(2 whistle works).
  • Drain the water well.Take a dosa karandi or a spoon and pound the jackfruit to a scramble form. 
  • Add the grated coconut to the pounded jackfruit, mix well and keep it aside.
  • Now take a kadai,heat oil, add mustard seeds(allow to splatter),curry leaves, red chilli,sliced onion and saute for 2 minutes.
  • Add the mixture of jackfruit and coconut to kadai. Mix well.
  • Elegant Idichakka Thoran is ready to serve.
