Vegetable / Vegan Sandwich

Vegetable sandwich is the most common, light and quick sandwich for a breakfast and evening snack in India. Sandwich is always fulfilling, healthy and easy to make. These are a very popular street food but the homemade sandwiches are always hygienic and stating. I learned this recipe of Vegetable Sandwich for my mother. I made this slight variation of adding green chutney on the bread. The preparation just takes 15 minutes, grind the coriander-mint chutney, slice the veggies and it’s done. I am making a toast of bread loaves and then a toast sandwich but you can simply skip making toast and go with a regular one....



Ingredients :

Green Sandwich Chutney :

Coriander leaves - 1 cup
Mint leaves - 1/2 cup
Green Chillies - 2
Salt
 
 

For just 2 sandwiches ~

4 slices of bread (Brown or white)
Thin slice of each cucumber, tomato, onion
Black salt and black pepper to taste
Coriander-mint chutney
Chaat masala (optional)


Method :

Grind the ingredients for the green chutney with little water to a smooth paste.

Take 4 slicee of bread and make a toast of them in a toaster.

Spread green chuney evenly on one of the bread slice.

Then on the same slice put sliced cucumber, tomato, onion pieces, blach salt and black pepper.

On the other slice of bread spread some green chutney.

Now put this slice on the earlier one and cut into 2 vertical or horizontal pieces.

serve it immediately.
