- Whole wheat flour-1 1/2 cup
- Milled flax seed-1/4 cup
- Sugar-1/2 cup
- Baking powder-2 tsp
- Baking soda-1/2 tsp
- Salt-1/2 tsp
- Egg ,beaten- 1 no
- Finely chopped apples(optional)-1-1/2 cups
- Vegetable oil-3 tbsp
- Milk-1/2 cup
- Vanilla essence-1 tsp
- Chopped nuts(optional)-1/2 cup
- Light brown sugar-3 tbsp
Method
- Blend dry ingredients together.
- Combine egg,vegetable oil,vanilla essence and milk,in a separate bowl.
- Add dry ingredients to egg mixture and stir until just blended.
- Fold in apples and nuts.
- Fill well greased muffin cups 2/3 full.
- Sprinkle chopped nuts and light brown sugar on top.
- Bake at 400 deg F for 18 to 20 minutes or until top springs back when touched.
